Buttermilk Bread with Za’atar and Sesame

I wanted to use some buttermilk leftovers. I needed bread. So I combined.

This is one truly great recipe – you can experiment with sweet and savory versions, just follow the basic recipe! However, I suggest trying this one as well. 🙂 Oriental flavors of za’atar and sesame perfectly match with some olives and cheese…it is an appetizer or a snack from heaven.

This bread has a consistency more like a cake, it is moist and soft, so it keeps fresh for 2-3 days, which is really practical.

 

BUTTERMILK BREAD WITH ZA’ATAR AND SESAME

(makes 1 loaf in a 11-inch pan)

 

Ingredients:

1 cup + 1 Tablespoon whole wheat flour

3/4 cup oat flour

1 teaspoon sugar

2 teaspoons baking powder

1 teaspoon salt

3 teaspoons za’atar – or another aromatic herb (you can skip this for a more neutral taste)

1 teaspoon = 2 teaspoons sesame seeds

3/4 cup + 1 Tablespoon buttermilk

1 egg

1/4 cup olive oil

 

Instructions:

  1. In a big bowl mix all dry ingredients.
  2. Separately whisk buttermilk, egg and olive oil then slowly add them to the flour blend. Gently fold them.
  3. Spray or butter the loaf pan (use baking dish if desired) then scrape the batter into it. Sprinkle with sesame.
  4. Bake for 40-45 min at 350F. Let it cool slightly before taking it out from the pan, and enjoy fresh.
