I wanted to use some buttermilk leftovers. I needed bread. So I combined.
This is one truly great recipe – you can experiment with sweet and savory versions, just follow the basic recipe! However, I suggest trying this one as well. 🙂 Oriental flavors of za’atar and sesame perfectly match with some olives and cheese…it is an appetizer or a snack from heaven.
This bread has a consistency more like a cake, it is moist and soft, so it keeps fresh for 2-3 days, which is really practical.
BUTTERMILK BREAD WITH ZA’ATAR AND SESAME
(makes 1 loaf in a 11-inch pan)
Ingredients:
1 cup + 1 Tablespoon whole wheat flour
3/4 cup oat flour
1 teaspoon sugar
2 teaspoons baking powder
1 teaspoon salt
3 teaspoons za’atar – or another aromatic herb (you can skip this for a more neutral taste)
1 teaspoon = 2 teaspoons sesame seeds
3/4 cup + 1 Tablespoon buttermilk
1 egg
1/4 cup olive oil
Instructions:
- In a big bowl mix all dry ingredients.
- Separately whisk buttermilk, egg and olive oil then slowly add them to the flour blend. Gently fold them.
- Spray or butter the loaf pan (use baking dish if desired) then scrape the batter into it. Sprinkle with sesame.
- Bake for 40-45 min at 350F. Let it cool slightly before taking it out from the pan, and enjoy fresh.
