Intensly crunchy and sweet, this seedy granola pairs perfectly with some yogurt and fruits.
Only 8 ingredients, half an hour of your time, and you are set for breakfast for the entire week.
Granola is my friend in need. It is saving me from hunger when I am running to work, it isthere for me in those moments when I want something sweet to snack on, it is even by my side on those long days when I am feeling down and too tired to cook anything for dinner… With almond milk, coconut yogurt, over smoothie, with fruits..it always works!
I already have a few granola recipes on the blog, so here is a reminder – in this one I used mashed banana as a base (Cashew Banana Flaxseed Granola), and here I turned it to a seasonal treate, making it with pumpkin puree (Pumpkin Granola with Carob, Almonds and Dried Figs).
Tthis time I went with a classic version, using only oil and sweetener from the liquid substances, so this Sesame Coconut Granola is sweet, very crunchy, and really addictive.
Combination of sesame seeds and maple syrup in this Sesame and Coconut Granola reminds me so much of the Greek sesame candy “pasteli”, which I love (Pasteli is traditionally made with honey so if it is not important to you to make it vegan, feel free to use honey instead of maple syrup in this recipe as well). There are also some nuts in it as well as unsweetened coconut, which makes it really nutritious. All in all, it really goes nice with some yogurt and/or fruit and I think it is one good granola that you can add to your granola recipe archive. 😉

SESAME COCONUT GRANOLA {vegan, gluten-free}

- makes 2 17oz (500 ml) jars
Prep time: 5 min >> Bake time: 25 min >> Total time: 30 min
Ingredients:
- 3 cups oats*
- ½ cups of white sesame seeds
- ½ cup shredded coconut
- ½ cups of Brazil nuts, chopped **
- ¼ cup melted coconut oil
- 3 Tbsp maple syrup ***
- 2 Tbsp coconut sugar
- ¼ tsp salt
Method:
- Preheat your oven to 350F (170C) and line a baking tray with baking paper.
- In a big mixing bowl, combine oats, sesame seeds, coconut and Brazil nuts.
- Combine coconut oil, maple syrup, coconut sugar and salt in a small pot and warm over low heat.
- Pour warm liquid over dry mixture and stir to combine.
- Spread granola mixture in a single layer on the tray and place in the oven.
- Bake on 350C for 15 minutes, then take it out, stir with a spoon (you can also rotate the tray if neccessary) and put back in the oven for another 10-12 minutes. Keep an eye on it, because you want it golden brown, not burned.
- Take it out and leave it to cool before serving or storing. If you like it to be clumpier, do not stir while cooling.
Notes
*I used quick oats because I didn’t have regular rolled oats at hand, therefore my granola turned out like this. Feel free to use regular rolled oats.
**You can use any other nuts you like here – almonds, walnuts, pecans… they would all go really nice in this combination.
*** If you like your granola to be stickier, you can use honey instead.
